Spanish Cod


Original recipe makes 6 servings

  1. 1 tablespoon butter
  2. 1 tablespoon olive oil
  3. 1/4 cup finely chopped onion
  4. 2 tablespoons chopped fresh garlic
  5. 1 cup tomato sauce
  6. 15 cherry tomatoes, halved
  7. 1/2 cup chopped green olives
  8. 1/4 cup deli marinated Italian vegetable salad, drained and coarsely chopped
  9. 1 dash black pepper
  10. 1 dash cayenne pepper
  11. 1 dash paprika
  12. 6 (4 ounce) fillets cod fillets


Warm the butter and olive oil in a large container over method heat. Prepare and mix fresh vegetables and beans until fresh vegetables are a little bit soft, being careful not to burn the beans. Add tomato marinade and cherry tomato fresh vegetables, and bring to a cook. Stir in green olives and marinated fresh vegetables, and season with spice up, cayenne pepper, and paprika. Prepare fillets in marinade over method heat for 5 to 8 minutes, or until easily flaked with a hand. Serve immediately.
