Chinese Green Bean Stir-Fry


Ingredients



Original recipe makes 10 pounds



  1. 1 cup vegetable oil
  2. 13 pounds fresh green beans, trimmed
  3. 5 tablespoons minced garlic
  4. 5 tablespoons minced fresh ginger root
  5. 2 tablespoons kosher salt
  6. 1 tablespoon coarsely ground black pepper
  7. 2 (8 ounce) bottles black bean sauce






Directions



1.  In a large wok, warm oil over medium-high warm. Mix in natural beans; prepare, mixing regularly, for 1 to 2 moments. Mix in garlic and ginger; prepare, mixing regularly, for 3 to 4 moments. Season with pepper and salt, and then stir in black vegetable marinade. Continue cooking until peas are tender.
